Roseda Farm (Roseda Black Angus)
Genetics
Black Angus (Aberdeen Angus) bred from bulls selected for marbling, tenderness and fat thickness; the farm references its Wye Line genetics and breeding program and says it tracks cattle from embryo to plate
About
Family Black Angus farm in the hills of Monkton (Baltimore County), Maryland. Ed Burchell bought the farm in 1986 and founded Roseda in 1996 with cattle expert Dean Bryant; the farm lists about 350 acres and 600 head. Calves are weaned at seven months and graze pasture for most of their lives, then are finished on chopped corn plants and kernels, hay, alfalfa and soybean meal. All of the beef, including burgers and ground, is dry-aged 14 to 21 days. Rotational grazing, a gravity-fed water system that keeps runoff out of the Chesapeake Bay (1999 Baltimore County Soil Conservation District Cooperator of the Year), and a solar-powered farm and farm store.
